Apple Cinnamon Breakfast Bread (paleo, gluten free, dairy free)

Imagine apple cobbler for breakfast. Now imagine that it's not only healthy, but also low in carbs and under 70 calories per piece! Well, here it is! And oh so simple!
 
(Serves 12)
 
- 3 large eggs
- 1/2 cup applesauce
- 1/4 cup + 1 Tbsp coconut flour
- 1/4 cup honey
- 1.5 tsp cinnamon
- 1 tsp pure vanilla extract
- 1 apple, peeled and cubed
- Omega Crunch Sweet Cinnamon Shelled Flax (for topping)

Method:

Preheat oven to 350F.

Line an 8x8 baking dish with parchment paper.

Add the eggs, applesauce, coconut flour, honey, cinnamon and vanilla to a food processor and pulse until ingredients are well combined. Spoon the mixture into the lined baking dish. Evenly spread the cubed apple pieces on top of the mixture and gently press them down into it (they will not be fully covered). Sprinkle the shelled flax over the entire surface. Bake in preheated oven for 45-50 minutes (or until toothpick comes out clean). Cut into 3x4 pieces.
