Apple Crumble Cookies

Apple Crumble Cookies (dairy free)

Mmm... these are delicious! It's like apple crumble in a cookie! And with less than 5 g of sugar in each cookie, this is a great snack for you or your children.

(Makes 18 - 20 Cookies)

- 2-3 apples, peeled, diced (approx. 2 cups)
- 2 eggs
- 2 cups quick oats
- 1/3 cup coconut flour (now available at )
- 1/4 cup almond milk (or other milk alternative of your choice)
- 1/4 cup honey
- 1/4 cup xylitol (now available at )
- 2 Tbsp Omega Crunch Sweet Cinnamon Shelled Flax seeds
- 1 Tbsp chia seeds
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp nutmeg
- 1/4 tsp salt


Preheat oven to 350 F.

Line a baking sheet with parchment paper.

Combine all ingredients in a food processor. Pulse until it becomes smooth and all the apples are well blended into the mixture.Place a heaping Tbsp of mixture onto the lined parchement paper to form each cookie, leaving a couple inches between each one. Bake in preheated oven for 10 - 15 minutes. (After 10 minutes, keep a close eye so as to not burn. Mine take 13.5 minutes to be just right, but oven cooking times will vary.)
