Spaghetti Squash - How To

I fell in love with this versatile veggie about 2 years ago when I broke-up with pasta. (Read about how I broke-up with pasta here: http://bit.ly/1ijMAbX) This is a must-try if you're on any kind of carb-restricted diet, because when you scrape it out with a fork, the flesh peels out like spaghetti noodles, hence the name. 

When I was still a spaghetti squash newbie, all the info I found said to cut it in half and bake it. Um... no... that doesn't work... at all. Do you know how hard these things are? So unless you have the upper body strength of Arnold Schwarzenegger, bake your spaghetti squash at 400 F for 40 minutes, and THEN cut it! So. Much. Easier.

This bright yellow squash is a great addition to the dinner table because it has a mild flavor, great texture, and has vitamins A, C, E and K. It's also a good source of several B vitamins. So go ahead, give it a try; especially if you're thinking about breaking-up with pasta!
