Chocolate Peanut Butter Puffs (vegan, low carb)
Under 100 calories, and only 5g sugar per serving, this low carb treat is perfect for the whole family! It’s sweet and creamy, and the best part is that it’s guilt free!
(Makes 16 - 2” Squares)
- 1/3 cup + 1 Tbsp brown sugar (or coconut sugar)
- 1/3 cup natural peanut butter
- ¼ cup coconut oil
- ¼ cup cocoa powder + 2 Tbsp
- 2 Tbsp Omega Crunch Roasted Maple Shelled Flax
- 1 cup millet puffs
Line an 8x8 baking dish with parchment paper.
In a medium/large sauce pan, over medium heat, melt the sugar, peanut butter and coconut oil, stirring constantly. Stir in the cocoa powder until well blended. Remove from heat and add in the flax and the millet. Stir until all the millet is covered in the sauce. Spoon the mixture into the lined baking dish and use a spatula to evenly spread and press the mixture into the bottom of the dish. Put in the freezer until the mixture has set and cooled completely, then cut into squares. Keep refrigerated.
