Coconut Lime Chicken

I am loving lime lately. And what’s better than lime? Lime and coconut! Summer has officially begun so let’s celebrate with a tropical sweet & sour sauce.
 
(Serves 2)

- coconut oil to grease pan
- 2 Chicken breasts, cubed
- 3 Tbsp full fat coconut milk
- 2 Tbsp lime juice
- 2 Tbsp unsweetened shredded coconut
- ½ onion, chopped
- 1 packet stevia
- sea salt to taste
- 2-3 Tbsp water cold water
- ½ tsp tapioca starch
- 1-2 Tbsp Omega Crunch Roasted Maple Shelled Flax Seed

Method:

Lightly grease pan with coconut oil. Brown the chicken. Once the chicken is browned, add the lime juice, coconut milk, shredded coconut, onion and stevia. Cover and continue to cook until chicken is cooked through and onions are tender. While chicken is cooking, stir the tapioca starch into the water (in a small bowl) until dissolved. Add the starch mixture to the chicken and continue to stir over medium heat until thickened. Add salt to taste. Remove from heat and stir in the flax seed. For a low carb meal, serve over cauliflower rice.
