Hawaiian Chicken

(Serves 3)

I call this a “One Pan Wonder”. A simple meal, that tastes great, is loaded with vitamins and minerals, cooked in one pan. Hello quick and easy! Or shall I say “Aloha”? 

- 2 chicken breasts, cubed
- 1 Tbsp virgin coconut oil
- 2 cloves garlic, minced
- 1 onion
- 4 med-large button mushrooms
- 1 green pepper
- 1 can pineapple tidbits & juice (no sugar added)
- 1 Tbsp pure honey
- Omega Crunch Roasted Maple shelled flax (for topping)

Method:

In a large pan, sautee the chicken in the coconut oil. Once chicken is cooked, add the garlic, onion, mushrooms, and green pepper. Cook until the pepper is tender. Add the pineapple juice, tidbits, and honey and stir through. Top with the shelled flax for added flavor and nutrients.
