Vegan Mac & "Cheese" Sauce (dairy free)
Kid approved, dairy free cheese sauce in under 10 minutes! It’s thick, creamy, and so “cheesy” it can rival any traditional cheese sauce. Try it!
- 1 can full fat coconut milk
- 3 – 5 Tbsp nutritional yeast
- 1 tsp oregano
- Salt & pepper to taste (*optional)
- 1 – 2 Tbsp tapioca starch
- ¼ cup – ½ cup cold water
- Omega Crunch Roasted Garlic Shelled Flax (for topping)
Add the coconut milk, nutritional yeast, oregano, salt and pepper to a medium saucepan over medium high heat. Bring to a boil, stirring occasionally. Stir 1 Tbsp of tapioca starch into ¼ cup of cold water until dissolved. Once the sauce is boiling, add the water/tapioca mixture and stir constantly until sauce thickens (approx. 1 minute). Pour sauce over pasta, gluten free noodles, or (my personal favorite) zucchini noodles. Top generously with Omega Crunch Roasted Garlic Shelled Flax.
*If you prefer a thicker sauce, mix another Tbsp of tapioca starch with another 1/4 cup cold water and stir into sauce until it reaches desired consistency.
