100 Calorie Apricot Crunch Bars (grain free, nut free, low carb)
Whether it be for breakfast or a mid-day snack, healthy eating just got easier. With less than 10 minutes of prep and 25 minutes in the oven, you can enjoy this healthy treat all week long.
(Serves 12)
- 1 cup dried apricots
- ½ cup coconut flour
- 2 Tbsp Omega Crunch Roasted Maple Shelled Flax
- 1 Tbsp shredded coconut
- 1 Tbsp pepitas (shelled pumpkin seeds)
- 1 Tbsp honey
- ¼ tsp sea salt
- 3 eggs
- ½ cup egg whites (or 4 egg whites)
Method:
Preheat oven to 350 F.
Line or grease an 8x8 baking dish.
Add the apricots, coconut flour, flax, shredded coconut, pepitas, honey and sea salt to the food processor and pulse until the apricot is diced into small pieces. Add the eggs and egg whites and pulse again until all ingredients are well blended. Spoon the batter into an 8x8 (greased or lined) baking dish, and evenly smooth it out with the back of a spoon. Bake for 25 - 30 minutes. Allow to cool before cutting. Refrigerate leftovers in an airtight container.
