Biscuits & Spiced Pear Purée
Did you know that biscuits could be healthy? And they could still taste amazing? Slather one of these with this puree, top with Roasted Maple shelled flax, and your mouth will thank you.
Biscuits (Makes 6)
- 4 egg whites
- 1/2 cup blanched almond flour
- 2 Tbsp coconut flour
- 0.5 tsp baking powder
- 1/4 tsp salt
- 1 Tbsp lard
Method:
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper. Mix all dry ingredients in a large mixing bowl. Cut in lard with a fork until the mixture is crumbly. Or, if you don’t mind getting your hands dirty, just dig in and mix it with your hands until it crumbles. Place the bowl in the refrigerator for 10 minutes. In a medium bowl whisk egg whites until they are frothy – very frothy! Add the egg whites into the chilled mixture until well combined. Scoop about 1/4 cup of dough onto the baking sheet - smooth the top of each to form biscuits. Here’s a great trick - use an ice cream scoop to scoop your dough onto the baking sheet, then gently flatten the top of each biscuit. You’ll get a perfect biscuit shape every time! Bake for 15-18 minutes, or until the tops are golden brown. Serve warm with Spiced Pear Purée, topped with Omega Crunch Roasted Maple Shelled Flax. Refrigerate leftovers in an air tight container.

Spiced Pear Purée (makes approx. 10 Tablespoons)
- 1 medium pear, ripe, peeled, cubed
- 1 medium apple, peeled, cubed
- 2 Tbsp water
- 1 Tbsp honey
- 1 tsp cinnamon
- ¼ tsp xanthan gum (x2)
Method:
Add your pear, apple, water, honey and cinnamon to a medium saucepan and heat over medium heat until liquid begins to bubble. Reduce heat and simmer on low for 15-20 minutes or until fruit is tender, stirring occasionally. Return heat to medium and once it bubbles, sprinkle ¼ tsp xanthan gum into mixture and stir constantly. Once xanthan gum is blended in, sprinkle the remaining ¼ tsp and stir constantly until liquid thickens. Remove from heat. Add to food processor (or blender) and pulse until all fruit is blended and pureed. Spoon into glass jars and refrigerate once cooled.
