This is Kelly, from Kitchen Caleigh and yes, I did it, I broke-up with pasta. I'm not ashamed to admit that ending such a long term relationship truly did bring me to tears more than once. There I stood, in my kitchen, raw vegetables on the cutting board, chicken frying on the stove, a paring knife in one hand and tears flowing freely (as I tried desperately to wipe them away with my free hand).

You see I was an addict. I was addicted to all things starchy - carbs were my favorite "food group", and pasta was high on the list. We ate it at least once a week because it was cheap, filling, quick, and easy. (I despised being in the kitchen back then, so quick and easy was imperative!) It really was the perfect meal for a busy family, or so I thought.

Then, one day, everything changed. I was told by my naturopath that I should make drastic dietary changes (including no grains or gluten) in order to recover from a debilitating neurological illness - an illness which had taken it's toll on my brain and left me with very little quality of life. The stakes were high. I was fighting for my health, so cheating wasn't an option. Just like that, my love affair with pasta came to an abrupt end.

The first few weeks were rough (and I often giggle when I reminisce about my low carb meltdowns) but then, it happened. I discovered a gem, a genuine treasure in the produce aisle. Like me, you might have heard of it, but never ate it because it sounded so healthy and altogether unappetizing. The long, green vegetable called Zucchini. This wonderful squash revolutionized the way I looked at healthy eating and opened my mind to some simple techniques which allowed me to, once again, enjoy some homemade pasta. It still meets all of my requirements - cheap, filling, quick, and easy. It also meets my health requirements - low carb, no grains, and no gluten.
