Brazilian Chicken (paleo, dairy free)
This is one of my family's favorite meals, kids included! It's easy and nutritious which is why it's become a go-to staple in our home.
- 4 chicken breasts, cubed
- 1 can light coconut milk
- 1 cup diced tomatoes (with some juice)
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloved garlic, minced
- 1 tsp paprika
- 1 tsp tumeric
- 1 tsp cumin
- Omega Crunch Roasted Garlic Shelled Flax (for topping)
Method:
Cook the chicken in a large skillet over medium heat. Add in all the other ingredients and continue cooking over medium heat until onions are transluscent and the peppers are tender. Simmer until sauce reduces to desired consistency. Serve over rice (or my personal favorite, steamed riced cauliflower) and top with Omega Crunch Roasted Garlic Shelled Flax.
