Cauliflower Pizza Crust (grain free, dairy free)
It looks like a pizza crust, cuts like a pizza crust, holds together like a pizza crust, but this crust is low calorie, high protein, high fiber and so delicious!
(Makes 1 personal size pizza crust)
Ingredients:
- 1 + 1/4 cup raw cauliflower, roughly chopped (345g)
- 1 large egg
- 1 Tbsp tapioca starch (same as tapioca flour)
- 1 Tbsp nutritional yeast
- 1 Tbsp Omega Crunch Roasted Garlic Shelled Flax Seed
- pinch of Himalayan salt or sea salt
Method:
Preheat oven to 400F.
Line a pizza pan with parchment paper.
Pulse raw cauliflower into crumbs. Microwave the cauliflower on high for 5 minutes. Meanwhile, combine all the other ingredients in a large bowl and stir until well combined. Add in the microwaved cauliflower and stir to form a consistent mixture. Spoon mixture (it doesn't look like dough at all!) onto lined pizza pan, use the back of a spoon to shape the mixture into a circle, 6-7 inches in diameter and about 1/3 inch thick. Bake in preheated oven for 10 - 15 minutes or until middle is cooked through.
