Coconut Sandwich Bread

Coconut Sandwich Bread (grain free, gluten free, nut free)

Lunchtime isn’t the same without a sandwich once in a while. This bread does not contain starchy carbs, or grains. Plus, it’s nut free so you can send it in school lunches.

(Yields Approx. 16 Slices)

- ¾ cup coconut flour
- 1 tsp baking soda
- 0.5 tsp xanthan gum
- 1 Tbsp ground flax
- 0.5 tsp sea salt
- 5 eggs
- ½ medium ripe banana
- ¼ cup coconut oil, softened
- 1 Tbsp pure honey
- 1 Tbsp apple cider vinegar
- 1 Tbsp Omega Crunch Regular Shelled Flax

Method:

Preheat oven to 350 F.

Grease the sides (with coconut oil) of a 9”x5” (1.5 L) loaf pan and line the bottom with parchment paper.

In a medium bowl, combine the coconut flour, baking soda, xanthan gum, ground flax and sea salt. Pulse the eggs in a food processor until cream colored and frothy and then set aside in a medium bowl. Add the bananas, oil, honey, vinegar and shelled flax seed to the food processor and puree. Add the eggs back in the food processor with the banana mixture. Pulse until all ingredients are combined. Add the flour mixture bit by bit, pulsing in between additions until you have a blended thick batter. Spoon the batter into the greased/lined loaf pan and bake in preheated oven for 35-40 minutes.
