Cranberry Maple Granola Bars

Cranberry Maple Granola Bars (vegan)

(Makes 20 Bars)

What’s better than the sweet aroma of maple filling the house? How about chewy, grain free granola bars? Even the mixture is delicious, so show restraint because the end result is worth it.

- ½ cup dried cranberries (no sugar added)
- ½ cup raisins
- ¼ cup Omega Crunch Roasted Maple Shelled Flax
- ¼ cup walnuts
- ¼ cup almonds
- ½ cup pure maple syrup
- ¾ cup coconut flour

Method:

Preheat oven to 325 F.

Line a cookie sheet with parchment paper. In a food processor, combine cranberries, raisins, flax seeds, walnuts, and almonds. Pulse until the nuts are roughly chopped. Add in the syrup and pulse again until well blended. Add the coconut flour ¼ cup at a time, pulsing in between. Important – do not eat all the mixture! It tastes amazing, but you must show restraint if you want granola bars at the end! Spoon the mixture onto the lined cookie sheet and using your hands form a rectangle (10” x 5” x ¾” high) with the mixture. Bake 35-40 mins or until middle begins to set. Let cool (it will continue to set as it’s cooling). Cut into 20 equal pieces.
