Crispy Carrot Fries (vegan, paleo, low carb)
Craving fries? Here’s a healthy alternative that will you keep you on track and fill you up! Great for the whole family. Dinner just got healthier!
(Serves 4)
- 6-8 medium carrots, peeled, cut lengthwise into ¼ inch sticks.
- 2 Tbsp coconut oil (room temp/melted)
- 1 Tbsp Omega Crunch Roasted Garlic Shelled Flax
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp Himalayan salt
Method:
Preheat oven to 425 F.
Line a baking sheet with parchment paper.
In a large bowl, mix all ingredients (except the carrots) until all the seasonings are mixed into the oil. Then toss the carrots sticks in the bowl until all the sticks are well coated in the seasoning. Arrange the seasoned carrots evenly on the lined baking sheet. Bake on bottom rack for 15 minutes. Remove from the oven and flip. Turn the oven to broil. Return the carrots to the oven, on the top rack for 5 minutes. Flip again and return to the top rack for another 5 minutes until crispy. Serve immediately and enjoy!
