Garam Masala Stuffed Zucchinis (low carb, grain free, dairy free)
Garam Masala has made it’s way to my short list of favorite seasonings. And zucchini is my all-time favorite vegetable so this combination is (in my opinion) something everyone should try! This is a low calorie, savory meal that is as tasty as it is filling.
(Makes 8 Zucchini Halves)
- 4 medium zucchinis, cut lengthwise and seeds scooped out
- 1 bonesless, skinless chicken breast
- 1 egg
- ½ cup diced tomatoes (without juice)
- 1 medium onion
- 1 large button mushroom
- ½ bell pepper (green, red, or yellow)
- 1 clove garlic
- 1 Tbsp nutritional yeast
- 1 Tbsp Omega Crunch Roasted Garlic Shelled Flax Seed
- 2 – 3 tsp garam masala spice mix
- ½ tsp sea salt & cracked black pepper
Method:
Preheat oven to 350 F.
Grease or line (with parchment paper) the bottom of two baking dishes.
Cut off tips and stems of zucchinis. Wash and cut them lengthwise and scoop out all the seeds. Roughly chop all the vegetables (except for the zucchini) and chicken and add them to the food processor. Add the garlic, nutritional yeast, flax seeds, garam masala spice, sea salt and pepper to the food processor. Pulse until all ingredients are blended and almost pureed. Lay the zucchini in the lined/greased baking dishes. Spoon the mixture to fill each zucchini. Bake in preheated oven for 45 – 50 minutes, or until the zucchini is tender.
