Green Tea Grain Free Pancakes (dairy free, gluten free, nut free) Just in time for St.Patrick's Day! These kid approved green pancakes have great texture and taste that will be fun for the whole family. As a bonus - a berry puree recipe to keep your taste buds happy and the sugar to a minimum.
(Makes 5-6 Pancakes, Recipe Can Be Doubled)
- 1/2 cup tapioca starch
- 1/4 cup coconut flour (now available at www.omegacrunch.com )
- 1 Tbsp xylitol (now available at www.omegacrunch.com )
- 1.5 tsp matcha (ground green tea leaves - for a brighter green add more)
- 0.5 tsp baking powder
- 1/4 tsp Himalayan salt, or sea salt
- 2 eggs
- 1/4 cup full fat coconut milk (coconut cream)
- 2 Tbsp coconut milk (drinkable low fat kind)
- 1 Tbsp coconut oil, melted
- 1 tsp vanilla extract

Method:
Pancakes:
Mix all dry ingredients in a medium bowl. Combine all wet ingredients in a separate large bowl and beat with a whisk until the eggs are well blended with other wet ingredients. Add the dry ingredients to the wet and use an electric mixer on medium setting to blend all ingredients and smooth out any lumps. Heat a griddle or large pan over medium heat and spritz with a light coating of oil (olive oil or coconut oil). Scoop the mixture from the bowl using a 1/4 cup measure onto the griddle/pan. Once bubbles begin to form on the pancake surface, flip and cook for an additional minute or until pancake is cooked through. Top it off with the *NEW* Omega Crunch Super Sprinkle!
Berry Puree:
Heat frozen berries over medium heat until warmed through. Transfer to a food processor and pulse until all berries are pureed. (Or you can puree in a blender.)
