Omega Crunch Power Bars
Mid-day crash got you down? Here’s a healthy “pick-me-up” that’ll get you through. Pack ‘em in your lunch, or take ‘em on the road, but beware, if your kids taste them, there may not be any left for you!
(Serves 8)
- ¼ cup almonds – whole
- 2 Tbsp sunflower seeds
- 2 Tbsp Omega Crunch Roasted Maple Shelled Flax
- ¼ cup raisins
- ½ scoop protein powder
- 2 Tbsp unsweetened medium shredded coconut
- 1 Tbsp pure cocoa powder
- ¼ cup almond butter
- ¼ cup honey
- 1 egg white
- 1 Tbsp coconut flour
- 1 Tbsp chia seed meal
Method:
Preheat oven to 350F
Combine all ingredients in a food processor and pulse until well blended and almonds are finely chopped. Line the bottom of an 8x4 inch loaf pan with parchment paper. Spoon mixture into the loaf pan and spread evenly. Bake at 350F for 30-40 minutes. Let cool. Cut into 8 servings.
