Primal Fruit & Nut Bars

Primal Fruit & Nut Bars (gluten free, paleo, *vegan option)

This luxurious chocolate treat is silky smooth and melts in your mouth with the perfect balance of crunchy, chewy and sweet. Coming in at 131 calories per bar, and only 7g of sugar, it's a must try!

(Serves 16)

- 1/2 cup coconut oil
- 1/3 cup cocoa powder
- 1/4 cup xylitol
- 2 Tbsp honey (*swap honey with pure maple syrup)
- 1 Tbsp almond milk
- 1 tsp vanilla
- 1 tsp cinnamon (**optional)
- 1/2 cup raisins
- 1/2 cup whole almonds
- 1/3 cup chopped apricots
- 1-2 Tbsp Omega Crunch Sweet Cinnamon Shelled Flax

Method:

Line an 8x8 baking dish with parchment paper.(Not wax paper! It will stick!)

In a medium saucepan, heat the oil, cocoa, xylitol, honey, almond milk, vanilla and cinnamon over medium heat. Stir constantly until everything is melted and blended. (Approx. 5 minutes.) Once the mixture is well combined add in the raisins, nuts, apricots and flax while continuing to stir. Removed from heat. Fold the fruit, nuts and flax seeds into the mixture until everything is coated. Spoon mixture into lined baking dish. Smooth out evenly with the back of a spoon and put in freezer to set - at least 1 hour. Once set, cut into 4x4. Serve chilled or frozen. Enjoy this little piece of heaven!
