Riced Apple Pudding
Think "rice pudding" only healthier, lower in carbs, naturally sweet, and incredibly filling. So whether it's for breakfast or dessert, this rice pudding alternative is something you can say "yes" to!
(Serves 4)
- 2 apples, peeled, roughly chopped
- 3/4 can light coconut milk
- 1/4 cup medium shredded unsweetened coconut
- 1/4 cup of Omega Crunch Super Sprinkle
- 1/4 cup raisins
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Method:
Pulse the apples in a food processor until the pieces are as small as grains of rice. Put all the other ingredients (except the raisins) in a medium saucepan and stir over medium heat until all the spices are bledned in. Add in the riced apple and continue to cook over medium heat, stirring frequently, until the coconut milk is reduced and absorbed and the apple is tender (about 15 minutes). Add in the raisins and stir through. Serve warm.
