Spicy Chicken
Are you that person who can't get enough heat and there's no such thing as too spicy? Well then, this is for you. Spice it up with this simple rub that is bursting with flavor!
(Serves 6)
- 6 boneless skinless chicken breasts
Rub:
- 4 Tbsp coconut sugar
- 1 Tbsp paprika
- 1 Tbsp Omega Crunch Roasted Garlic Shelled Flax
- 1 Tbsp Himalayan or sea salt
- 2 tsp mustard powder
- 1 tsp garlic powder
- 1 tsp white pepper
- 1 tsp crushed red pepper
*Note: This is a very hot rub. To make it more mild, use less mustard powder, or less white pepper or less crushed red pepper (or all of the above!)
Method:
Preheat oven to 350F.
Remove any excess fat from the chicken and pat dry with paper towel. In a large bowl, combine all ingredients for the rub. Dip each chicken breast into the rub (one at a time) and use your fingers to massage the spices into the meat. Place chicken in a large roasting pan or baking dish, careful not to overlap. Bake in preheated oven for 40 - 50 minutes (until an internal temperature of 165F is obtained). For a low carb meal (mashed potato substitute), serve with cauliflower puree - as seen in picture. (Cauliflower puree: Boil/steam cauliflower until very tender. Strain. Puree in food processor. If needed, strain again.)
