Strawberry Apple Buckle

Strawberry Apple Buckle (grain free, dairy free)

You know summer is just around the corner when strawberries are back at the market! My mother made buckle every summer, so I decided it was time to try a grain free, dairy free version and it is yummy!

(Serves 12)

- ¼ cup coconut oil, softened
- ¼ cup xylitol
- ½ cup honey
- 3 eggs, beaten
- ½ cup egg whites
- ¼ cup almond milk (unsweetened)
- ¾ cup coconut flour
- 1 Tbsp ground flax
- 1 tsp baking powder
- ¼ tsp sea salt
- 1 cup fresh strawberries, sliced
- 1 cup apple, peeled, thinly sliced

Topping:

- 2 Tbsp chopped almonds
- 1 Tbsp xylitol
- 1 Tbsp Omega Crunch Sweet Cinnamon Shelled Flax
- 2 tsp coconut oil
- ½ tsp cinnamon
- ¼ tsp nutmeg

Method:

Preheat oven to 350 F.

Grease or line an 8”x8” square baking dish.

In a food processor, cream the coconut oil and xylitol. (It creams just like butter and sugar!) Add the honey, all the eggs, and almond milk. Pulse until well blended. In a medium bowl, combine the coconut flour, ground flax, baking powder and sea salt. Slowly add the coconut mixture to the egg mixture in the food processor. Once all ingredients are well blended, return the batter to the medium bowl. Fold in the strawberries and apples. Spoon the batter (evenly) into your greased/lined baking dish.

Topping:

Combine all ingredients in a small bowl. Use your fingers to crumble the mixture evenly over top of the batter. Using your fingertips, gently press the topping into place. Bake in preheated oven (350 F) for 35 minutes, then reduce heat to 325 F and continue to bake for an additional 15 minutes or until toothpick comes out clean.
