Strawberry Lemonade Squares (grain free, dairy free)
Summer = strawberry lemonade. So here’s a strawberry lemonade treat of a different kind. Coming in under 100 calories per serving, these squares get you in the mood for summer and won’t derail your plans for that bathing suit you’ve been eyeing.
(Serves 12)
- 4 eggs
- ¾ cup fresh strawberries (chopped)
- ½ cup honey
- 5 Tbsp coconut flour
- 2Tbsp Omega Crunch Roasted Maple Shelled Flax
- 4 Tbsp lemon juice
- 2 tsp vanilla
- zest of 1 lemon
- 2 Tbsp shredded unsweetened coconut (for topping)
Method:
Preheat oven 350 F.
Line an 8x8 baking dish.
Put all ingredients (except the shredded coconut) in a food processor and pulse until it’s well blended, but the strawberries are still in small pieces and not pureed. Pour the batter into the lined baking dish evenly. Sprinkle the shredded coconut evenly to cover the entire surface. Bake in preheated oven for 45 – 50 minutes or until toothpick comes out clean. Allow to cool before slicing.
