Sweet Cinnamon Granola Bars (grain free, dairy free)
A quick breakfast can help a rushed morning go smoothly, but it’s hard to find a gluten free breakfast on the go. Try these granola bars for your next quick fix, be it breakfast or an afternoon snack!
(Serves 13)
- ½ cup raisins
- 1/3 cup coconut (shredded, unsweetened)
- ¼ cup Omega Crunch Sweet Cinnamon Shelled Flax
- ½ cup almonds
- ½ cup honey
- 2 tsp ground cinnamon
- 2/3 cup coconut flour
Method:
Preheat oven 325 F.
Line cookie sheet with parchment paper.
Combine all ingredients (except for the coconut flour ) in a food processor and pulse until all the almonds and raisins are broken down into very small pieces and the mixture forms a ball. (Scrape the sides of the food processor several times to ensure all pieces are broken down.) add the coconut flour bit by bit while continuing to pulse. Once all the coconut flour is added and the mixture is well blended, spread the mixture onto the lined cookie sheet. Using the palms of your hands, flatten the mixture into a 13”x4” rectangle on the parchment paper. Bake for 20 – 30 minutes or until middle is set. (watch it closely at the end so it does not burn!) Allow to cool. Cut into 13, one inch strips.
