Chicken Soup - Fully Loaded (recipe)

Comfort food doesn't have to be unhealthy. One of my favorites, as a child and as an adult, is good old homemade chicken soup. (I've even included a recipe for easy chicken stock!)

(Serves 6)

Ingredients:

  • 2 cups chicken stock (*recipe below)
  • approx 2 cups leftover chicken, chopped, cubed
  • 1 cup carrots, peeled, sliced
  • 1 cup celery, sliced
  • 1 cup red bell pepper, diced
  • 1 medium onion
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • sea salt and pepper to taste
  • Omega Crunch Roasted Garlic shelled flax (1 - 3 Tbsp)

Put all ingredients in a large pot (except the shelled flax) and bring to a boil. Reduce heat and simmer until vegetables are tender. Shake in desired amount of shelled flax.

Easy Chicken Stock:

  • 1 small frying chicken carcass (using all bones)
  • 1 celery stalk
  • 1 medium onion
  • 1/2 cup sliced carrots (peeled)
  • 1 tsp himalayan salt (or sea salt)
  • approx. 1/4 tsp cracked black pepper
  • water to cover

Method:

In a large pot add all ingredients and add enough water to cover the chicken carcass. Bring to boil, then reduce heat to a low simmer. Simmer uncovered for 4 hours. Strain the stock and use only the liquid in your soup.
