Almost Oatmeal (Paleo, Vegan, Keto)

It's looks a lot like oatmeal, tastes a lot like oatmeal, but guess what - it's not oatmeal! This is a delicious, grain free breakfast, boasting 13g of fiber, and only 7g of net carbs! Kick start your day with healthy fat and a whole lot of yum. 

(Yields 1 Bowl of Awesomeness)

Ingredients: 

  • 2 Tbsp chia seeds
  • 1 Tbsp Omega Crunch Sweet Cinnamon Shelled Flax (available here: http://bit.ly/1nJ0djr)
  • 1/4 cup blueberries (fresh or frozen)
  • 1 tsp cinnamon
  • 1/3 cup unsweetened almond milk

Method:

It's so easy! Put all ingredients in a bowl. Microwave on high for 1-2 minutes (depending on if your blueberries are fresh or frozen) and voila! Done! (Heating it makes the chia seeds absorb more quickly. I you find it's too thick, just add more almond milk - just like you would with oatmeal.)

272 cals, 20g carbs, 18g fat (the good kind!), 9g protein, 13g fiber, 7g sugar

*net carbs = g carbs - g fiber = 7g net carbs
