No Bake Energy Bars (gluten free, dairy free)

Looking for a great afternoon or post workout snack? All this chocolaty almond goodness makes them taste like a treat, but they're only 125 calories each and loaded with nutrients! Perfect for fueling up! Also, a great snack for active kids!

(Yields 24 Bars)

Ingredients:

  • 1.5 cups oats
  • 1/2 cup almond butter
  • 1/2 cup pure maple syrup
  • 1/2 cup coconut oil
  • 1/2 cup unsweetened cocoa powder
  • 2 Tbsp Omega Crunch Roasted Maple Shelled Flax (available here: http://bit.ly/1l8QN0t)
  • 2 Tbsp chia seeds (available here: http://bit.ly/1iQrPla)
  • 1.5 tsp pure vanilla extract

Method:

Line an 8x8 baking dish with parchment paper.

Stir all ingredients together in a large bowl until well blended. Spoon evenly into the lined baking dish. Use the back of a spoon to press the mixture evenly throughout the dish. Set in freezer for 1 hour. Remove from freezer and cut into 24 squares (4x6). Keep refrigerated until serving. Serve chilled.

125 cals, 10g carbs, 9g fat, 2g protein, 2g fiber, 5g sugar
