Chia Pudding (paleo, vegan)

Ever try it? It. Is. The. BOMB. Seriously, if you've never tried it, you should! It's so simple and tastes soooooo good. It's a high fiber breakfast (or dessert) that is truly satisfying.

Ingredients: 

  • 1 cup unsweetened almond (or coconut) milk
  •  1/4 cup chia seeds
  •  2 tsp xyltiol (available here: http://bit.ly/1lnMp0G)
  •  fresh or frozen fruit
  •  Super Sprinkle for topping (available here: http://bit.ly/1hVQJyh)

Method:

whisk the milk, chia seeds and xylitol together, making sure there's no lumps at the bottom. Pour into a glass, or bowl and refrigerate for 1 - 8 hours (1 hour will work, overnight is better!) Add fresh or frozen fruit on top and stir it in. Enjoy!
