KC Bars (No-Bake Energy Bars) (nut free, dairy free, soy free, egg free)

Walk down the health food aisle and you are promptly met with a sea of energy bars to choose from. But not all energy bars are created equal. Some are very high in sugar, some contain known allergens and all of them cost a small fortune. Wouldn't it be nice to make them yourself, for a fraction of the cost, having control over the ingredients being used? Yes it would! So here's a recipe to rival those favorite store bought energy bars. 


Ingredients:

  • 1.5 cups raisins
  • 1 cup sunflower seeds 
  • ½ cup dates
  • 5 Tbsp cocoa
  • 3 Tbsp coconut flour
  • ¼ cup shredded coconut
  • 2 Tbsp Omega Crunch Roasted Maple Shelled Flax (available here: http://bit.ly/1l8QN0t)
  • 3 tsp vanilla

Method:

Line the counter or a cookie sheet with parchment paper.

Pulse all ingredients in a food processor, scraping sides as needed, until the ingredients breakdown into very small pieces and begin to form a crumbly mixture. (If you know your food processor has trouble breaking down dense ingredients, add the seeds, and coconut first. Then add the raisins and dates. Then add the remaining ingredients.) Once you have your broken down mixture, scoop it onto your parchment paper. Add another layer of parchment paper over top. Use a rolling pin to roll out the "dough", pressing firmly as you roll. Roll to between 1/4 - 1/2 inch thickness. Use a pizza cutter to slice the rolled out dough into desired sized bars. Store in fridge of freezer until ready to eat! Also perfect for kids lunch boxes to help give their bodies the energy they need to make it through the day - and they'll think it's a chocolate bar!
